
Mediterranean Ground Beef Stir Fry

Ingredients:
1 lb ground beef
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 zucchini, diced
½ cup cherry tomatoes, halved
¼ cup kalamata olives, sliced
1 tsp oregano
½ tsp cumin
½ tsp paprika
Salt & pepper, to taste
¼ cup feta cheese, crumbled
2 tbsp fresh parsley, chopped
Juice of ½ lemon
Instructions:
Heat olive oil in a large skillet over medium heat.
Add onion and garlic, sauté for 1-2 minutes until fragrant.
Add ground beef, breaking it up with a spatula, and cook until browned. Drain excess fat if needed.
Stir in bell pepper, zucchini, and cherry tomatoes. Cook for 5-7 minutes until veggies are tender.
Add olives, oregano, cumin, paprika, salt, and pepper. Stir well and cook for another 2 minutes.
Remove from heat and mix in feta cheese and parsley.
Squeeze fresh lemon juice on top before serving.
