red beans and rice

Ingredients:
1 pound small red kidney beans
1 red bell pepper
1 onion
3 large garlic cloves
1 jalepeno
1 pound smoked sausage
1 smoked pork hock
8 cups water
1 tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp pepper
1 tsp kosher salt
2 bay leaves
Pre-soak dry beans for 1 hour in cold water. Drain and add to salted boiling water ( 8 cups). Add pork hock. In large skillet brown sliced sausage in 2 tbsp oil. Chop all veggies and sautee in same skillet sausage was in after removing sausage. Add sausage and veggies to beans. Add all seasonings. Cook on high for 10 minutes and turn down to medium for approximately 3 hours or until beans are done. On side in pan have hot water ready to add if water evaporates too much. When beans are tender remove pork hock and peel off and chop ham inside of hock and add back to beans. Remove bay leaves.Take out 2 cups of beans and mash with potato masher add back to pan and stir. Enjoy with rice and cornbread.
