Nun’s Puffs

Ingredients:
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup powdered sugar, for dusting (plus extra if needed)
Optional: 1/2 cup chopped nuts (walnuts, pecans, or your favorite)
Optional: 1/2 teaspoon cinnamon
Instructions:
1. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper. This will prevent sticking and make cleanup easier.
2. In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. This is best done with an electric mixer, but can be done by hand if you’re feeling strong! Make sure the butter is truly softened, not melted, for best results.
3. Beat in the eggs one at a time, then stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix; a few lumps are okay. Overmixing can lead to tough cookies.
6. If using, gently fold in the chopped nuts and cinnamon.
7. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie. The dough will spread slightly as it bakes.
8. Bake for 10-12 minutes, or until the edges are lightly golden brown. Keep a close eye on them, as ovens vary.
9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
10. Once the cookies are completely cool, gently dust them with powdered sugar. You can use a sifter for an even coat, or simply sprinkle it on. If you’re feeling generous, you can dust them a second time for an extra sugary treat.
