White Chocolate Raspberry Cheesecake Brownies

Ingredients:

For the Brownie Base:

1 cup (2 sticks) unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
½ cup unsweetened cocoa powder
½ teaspoon baking powder
¼ teaspoon salt

For the Cheesecake Filling:

8 ounces cream cheese, softened
½ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
4 ounces white chocolate, melted and cooled

For the Raspberry Swirl:

1 cup raspberry jam or preserves

Instructions:

1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
2. Make the Brownie Base: In a large bowl, whisk together the melted butter and sugar until combined. Beat in the eggs one at a time, then stir in the vanilla extract.
3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
4. Pour half of the brownie batter into the prepared pan and spread evenly.
5. Make the Cheesecake Filling: In a medium bowl, beat the softened cream cheese and sugar until smooth. Beat in the egg and vanilla extract. Stir in the cooled melted white chocolate until well combined.
6. Spread the cheesecake filling evenly over the brownie layer.
7. Add the Raspberry Swirl: Dollop spoonfuls of raspberry jam over the cheesecake layer. Gently swirl the jam into the cheesecake using a knife or toothpick.
8. Pour the remaining brownie batter over the cheesecake and raspberry swirl. Spread evenly.
9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
10. Let the brownies cool completely in the pan before cutting and serving.

Notes:

You can use different types of jam or preserves for the swirl, such as strawberry or blackberry.
For a richer brownie base, use dark cocoa powder instead of unsweetened cocoa powder.
If you prefer a less intense raspberry flavor, reduce the amount of raspberry jam.
The brownies are best served at room temperature. They can be stored in an airtight container at room temperature for up to 3 days.
