Creamy Mango Coconut Mousse Parfait

This creamy mango coconut parfait is silky, naturally sweet, and tastes like a tropical dessert you’d order on vacation.

Ingredients

  • 2 large ripe mangoes, diced, divided
  • 1 cup full-fat coconut cream, chilled
  • 1 cup plain Greek yogurt
  • 3 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lime juice
  • 1/2 cup unsweetened shredded coconut
  • 1 tablespoon chia seeds (optional, for thickness)
  • 6-8 fresh mint leaves, for garnish

Instructions

  1. Set aside about 1/2 cup of the diced mango for topping, then blend the remaining mango with lime juice and 1 tablespoon maple syrup until smooth.
  2. In a bowl, whip the chilled coconut cream until fluffy, then fold in the Greek yogurt, vanilla extract, and remaining 2 tablespoons maple syrup until smooth and creamy.
  3. If you want a slightly thicker mousse texture, stir in the chia seeds and let the mixture sit for 5 minutes.
  4. Spoon a layer of diced mango into serving glasses, then add a generous layer of the coconut yogurt mousse.
  5. Add a layer of mango puree, then repeat with more mousse until the glasses are filled.
  6. Top with the reserved diced mango, a drizzle of extra puree, and a sprinkle of shredded coconut.
  7. Chill for 20-30 minutes before serving for the best texture, then garnish with fresh mint.

Tip: For an extra frosty, soft-serve-style dessert, freeze the diced mango first and blend it into the mousse for an even thicker, ice-cream-like texture.
