Sweet Potato Chocolate Cookies

These soft, fudgy sweet potato chocolate cookies are naturally sweetened, rich with cocoa, and incredibly easy to make.
Ingredients
- 1 cup mashed cooked sweet potato (240 g)
- 1/3 cup natural peanut butter (80 g)
- 2 tbsp unsweetened cocoa powder (15 g)
- 1 tbsp honey or maple syrup (20 g)
- 1/4 tsp vanilla extract (1 ml)
- 1/4 tsp baking powder (1 g)
- 2 tbsp dark chocolate chips, optional (20 g)
Instructions
- Preheat the oven to 180°C / 350°F and line a baking tray with parchment paper.
- In a mixing bowl, add the mashed sweet potato, peanut butter, cocoa powder, honey or maple syrup, vanilla extract, and baking powder.
- Mix until completely smooth and well combined. Fold in the dark chocolate chips if using.
- Scoop the dough into 6 equal portions and place them on the prepared tray. Shape each portion into a small cookie and flatten slightly with your hands.
- Bake for 12-15 minutes, until the cookies are set on the outside but still soft in the center.
- Let the cookies cool on the tray for a few minutes, then transfer to a rack to cool completely before serving.
Tip: For the best texture, use well-mashed sweet potato with no excess moisture; if the dough feels too sticky, chill it for 10-15 minutes before shaping.
