High-Protein Chickpea Chocolate Snack Bars

These soft, fudgy chickpea chocolate bars are a surprisingly delicious high-protein snack made with just a handful of wholesome ingredients.
Ingredients
- 1 1/2 cups cooked chickpeas, rinsed and drained
- 3 tablespoons peanut butter
- 2 tablespoons maple syrup
- 1/4 cup dark chocolate chips, divided
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease or line a small square baking pan with parchment paper.
- Add the chickpeas to a blender or food processor and blend until a very smooth paste forms, scraping down the sides as needed.
- Add the peanut butter, maple syrup, vanilla extract, salt, and baking powder, then blend again until the mixture is thick, creamy, and fully combined.
- Fold in half of the dark chocolate chips, then spread the batter evenly into the prepared pan.
- Sprinkle the remaining chocolate chips over the top and gently press them into the surface.
- Bake for 20–25 minutes, or until the bars are set and lightly golden around the edges.
- Let cool completely in the pan before slicing into bars for the best texture.
Tip: For extra fudgy bars, chill them for 30 minutes after cooling before cutting.
