High-Protein Chickpea Chocolate Snack Bars

These soft, fudgy chickpea chocolate bars are a surprisingly delicious high-protein snack made with just a handful of wholesome ingredients.

Ingredients

  • 1 1/2 cups cooked chickpeas, rinsed and drained
  • 3 tablespoons peanut butter
  • 2 tablespoons maple syrup
  • 1/4 cup dark chocolate chips, divided
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease or line a small square baking pan with parchment paper.
  2. Add the chickpeas to a blender or food processor and blend until a very smooth paste forms, scraping down the sides as needed.
  3. Add the peanut butter, maple syrup, vanilla extract, salt, and baking powder, then blend again until the mixture is thick, creamy, and fully combined.
  4. Fold in half of the dark chocolate chips, then spread the batter evenly into the prepared pan.
  5. Sprinkle the remaining chocolate chips over the top and gently press them into the surface.
  6. Bake for 20–25 minutes, or until the bars are set and lightly golden around the edges.
  7. Let cool completely in the pan before slicing into bars for the best texture.

Tip: For extra fudgy bars, chill them for 30 minutes after cooling before cutting.
