Chocolate Peanut Butter Banana Frozen Yogurt Cups

Creamy banana-Greek yogurt filling with peanut butter tucked inside crisp chocolate cups makes this healthy frozen treat taste like dessert heaven.
Ingredients
- 2 ripe bananas
- 1 cup Greek yogurt
- 1/3 cup natural peanut butter, divided
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1 cup dark chocolate chips
- 2 tsp coconut oil
- Pinch of sea salt
Instructions
- Line a muffin tin or small silicone cups with 6 paper liners or use 6 mini dessert cups.
- Melt the dark chocolate chips with the coconut oil until smooth, then spoon a little chocolate into each cup and swirl to coat the bottom and sides. Freeze for 10 minutes until set.
- In a blender or food processor, blend the bananas, Greek yogurt, 3 tablespoons of the peanut butter, honey or maple syrup, vanilla, and a pinch of sea salt until completely smooth and creamy.
- Spoon or pipe the banana yogurt mixture into the chilled chocolate-coated cups, leaving a little space at the top.
- Warm the remaining peanut butter slightly and drizzle a little over each cup, then freeze for 1 to 2 hours until firm.
- Top each cup with the remaining melted chocolate to seal, then freeze again for 15 to 20 minutes until fully set.
- Peel away the liners and let the cups sit at room temperature for 3 to 5 minutes before eating for the creamiest texture.
Tip: For the best ice-cream-like texture, use very ripe bananas and don’t skip letting the cups soften for a few minutes before serving.
