Apple Cinnamon Fiber-Rich Scoop Ice Cream

Creamy, cozy, and packed with tender cinnamon apples, this satisfying scoop tastes like apple pie à la mode in frozen form.
Ingredients
- 2 medium apples, peeled and diced
- 1 tbsp lemon juice
- 2 tbsp maple syrup or honey
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1 1/2 cups plain Greek yogurt
- 1 cup frozen banana slices
- 1/2 cup unsweetened applesauce
- 2 tbsp oat fiber or finely ground oats
- 1 tsp vanilla extract
- 2 tbsp chopped walnuts (optional)
- Extra cinnamon and apple pieces, for topping
Instructions
- Toss the diced apples with lemon juice, maple syrup, cinnamon, and nutmeg in a small pan. Cook over medium heat for 6-8 minutes until softened and lightly caramelized, then let cool completely.
- Add the Greek yogurt, frozen banana, applesauce, oat fiber, and vanilla to a blender or food processor. Blend until completely smooth and thick.
- Fold in about three-quarters of the cooled cinnamon apples and the walnuts, if using, leaving some apple pieces for swirling on top.
- Transfer the mixture to a loaf pan or freezer-safe container. Spoon the remaining apples over the top and gently swirl with a knife.
- Freeze for 2-3 hours for a scoopable soft-serve texture, or 4 hours for firmer ice cream.
- Let sit at room temperature for 5-10 minutes before scooping. Serve in waffle bowls or cones with extra cinnamon and fresh apple pieces on top.
Tip: For the creamiest texture, use very ripe frozen banana and chill the cooked apples fully before mixing so the ice cream stays thick and smooth.
