Raspberry Peach Swirl Ice Cream

Creamy peach ice cream swirled with bright raspberry sauce makes the ultimate fruity, summer-perfect frozen treat.

Ingredients

  • 3 ripe peaches, peeled and diced
  • 1 1/2 cups fresh raspberries
  • 3/4 cup granulated sugar, divided
  • 2 cups heavy cream
  • 1 cup whole milk
  • 4 oz cream cheese, softened
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1/8 tsp fine salt

Instructions

  1. In a saucepan, combine the raspberries, 1/4 cup sugar, and lemon juice over medium heat. Cook for 5-7 minutes until the berries break down, then strain to remove seeds and chill the sauce.
  2. Blend the peaches with the remaining 1/2 cup sugar until mostly smooth. For a stronger peach flavor, simmer the puree for 5 minutes, then cool completely.
  3. In a large bowl, beat the softened cream cheese until smooth. Whisk in the heavy cream, milk, vanilla, salt, and cooled peach puree until fully combined.
  4. Chill the mixture for at least 2 hours, then churn in an ice cream maker according to the manufacturer’s instructions until thick and creamy.
  5. Spoon one-third of the ice cream into a freezer-safe container, drizzle with some raspberry sauce, and repeat the layers. Gently swirl with a knife for a marbled effect.
  6. Freeze for 4-6 hours until scoopable. Serve topped with extra raspberry sauce, fresh raspberries, and peach slices if desired.

Tip: For the prettiest swirls, make sure the raspberry sauce is fully chilled and thick before layering it into the churned ice cream.
