Savory Cajun Chicken over Creamy Parmesan Linguine

Ingredients:
1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
1 tbsp olive oil
1 tsp Cajun seasoning
1/2 tsp paprika
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and pepper to taste
1 lb linguine pasta
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 tbsp chopped fresh parsley optional
Instructions:
1. Season the chicken cubes generously with Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper. Make sure each piece is well coated.
2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, until browned and cooked through about 6-8 minutes. Remove the chicken from the skillet and set aside.
3. While the chicken cooks, bring a large pot of salted water to a boil. Add the linguine and cook according to package directions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water.
4. Return the skillet to medium heat. Add the heavy cream and Parmesan cheese to the skillet and stir until the cheese is melted and the sauce is smooth and creamy. If the sauce is too thick, add a little of the reserved pasta water until you reach your desired consistency.
5. Add the cooked chicken to the creamy Parmesan sauce and toss to coat.
6. Add the cooked linguine to the skillet and toss to combine with the chicken and sauce.
7. Garnish with fresh parsley optional and serve immediately. Enjoy!
