Grilled Chicken Skewers with Spicy Peanut Sauce

Ingredients:
1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 yellow onion, cut into 1-inch pieces
1/2 cup peanut butter smooth or crunchy
1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons honey
1 tablespoon sriracha or more, to taste
1 tablespoon sesame oil
1 teaspoon grated ginger
1 clove garlic, minced
Wooden or metal skewers soaked in water for 30 minutes if using wooden skewers
Instructions:
1. In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sriracha, sesame oil, ginger, and garlic until smooth. Set aside.
2. Thread the chicken and bell peppers onto the skewers, alternating between chicken and peppers. If using onion, add it to the skewers as well, alternating with chicken and peppers.
3. Preheat your grill to medium-high heat.
4. Grill the skewers for 4-5 minutes per side, or until the chicken is cooked through and slightly charred. If using a gas grill, pre-heat for at least 15 minutes before grilling.
5. Remove the skewers from the grill and brush them generously with the peanut sauce.
6. Serve immediately, drizzling extra peanut sauce over the skewers if desired. Enjoy!
