No-Bake Strawberry Cheesecake

Creamy, fluffy, and packed with sweet strawberry flavor, this no-bake cheesecake sets up beautifully into perfect sliceable wedges.
Ingredients
- 200 g graham crackers, crushed
- 90 g unsalted butter, melted
- 500 g cream cheese, softened
- 120 g powdered sugar
- 240 ml heavy whipping cream, cold
- 200 g strawberries, finely chopped
- 120 g strawberry jam
- 1 tsp vanilla extract
- 2 tbsp lemon juice
- 8 g powdered gelatin
- 3 tbsp cold water
Instructions
- Line the bottom and sides of an 8-inch springform pan with parchment paper.
- Mix the crushed graham crackers with melted butter until evenly coated, then press firmly into the bottom of the pan. Chill while you make the filling.
- In a large bowl, beat the cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth. Mix in the strawberry jam, then fold in the chopped strawberries.
- In a separate bowl, whip the cold heavy cream to medium-stiff peaks, then gently fold it into the cream cheese mixture until light and fluffy.
- Sprinkle the gelatin over the cold water and let it bloom for 5 minutes. Microwave for 10-15 seconds until dissolved, then quickly whisk it into the filling.
- Pour the strawberry cheesecake mixture over the crust and smooth the top. Refrigerate for at least 6 hours, or until fully set and sliceable.
- Release from the springform pan, peel away the parchment, and serve chilled. Top with extra strawberries or jam if desired.
Tip: For the cleanest slices, chill the cheesecake overnight and dip your knife in hot water before cutting each piece.
