Apple Cheesecake Slice

Creamy cheesecake, tender cinnamon apples, and a buttery base come together in this dreamy slice that tastes like autumn in every bite.
Ingredients
- 200 g digestive biscuits or graham crackers, crushed
- 90 g unsalted butter, melted
- 500 g cream cheese, softened
- 150 g granulated sugar
- 2 large eggs
- 200 ml sour cream
- 1 tsp vanilla extract
- 2 apples, peeled and thinly sliced
- 1 tbsp brown sugar
- 1 tsp ground cinnamon
Instructions
- Preheat the oven to 170°C (340°F) and line a square or round baking tin with parchment paper.
- Mix the crushed biscuits with melted butter until evenly coated, then press firmly into the base of the tin. Chill while you make the filling.
- Beat the cream cheese and granulated sugar until smooth. Add the eggs one at a time, then mix in the sour cream and vanilla until creamy and lump-free.
- Pour half of the cheesecake mixture over the crust and smooth the top.
- Toss the sliced apples with brown sugar and cinnamon, then layer them evenly over the cheesecake mixture.
- Pour the remaining cheesecake batter on top and gently spread it to cover the apples.
- Bake for 45–55 minutes, or until the edges are set and the center still has a slight wobble. Cool completely, then chill for at least 4 hours before slicing.
- Cut into neat slices and serve cold for the best texture and flavor.
Tip: For an extra-special finish, brush the top with a little warm apricot jam or drizzle with caramel before serving.
