Healthy Chinese Ground Beef & Cabbage Stir Fry

Ingredients:
1 lb ground beef
1 medium head of cabbage, thinly sliced
1 medium onion, chopped
2 cloves garlic, minced
1 1-inch piece of ginger, minced optional, but adds great flavor!
2 tablespoons soy sauce low sodium preferred
1 tablespoon oyster sauce optional, adds umami
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 teaspoon cornstarch
1/2 teaspoon red pepper flakes or more, to taste
1 tablespoon vegetable oil
Green onions, chopped for garnish
Sesame seeds for garnish
Instructions:
1. In a small bowl, whisk together soy sauce, oyster sauce if using, rice vinegar, sesame oil, cornstarch, and red pepper flakes. Set aside.
2. Heat vegetable oil in a large wok or skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Remove the beef from the wok and set aside.
3. Add onion to the wok and cook until softened, about 3-5 minutes. Add garlic and ginger if using and cook for another minute until fragrant.
4. Add the sliced cabbage to the wok and stir-fry for 3-5 minutes, until it starts to wilt but is still slightly crisp.
5. Return the cooked ground beef to the wok. Pour the sauce mixture over the beef and cabbage and stir to combine.
6. Cook for 2-3 minutes, or until the sauce has thickened and the cabbage is tender-crisp. Stir frequently to prevent sticking.
7. Remove from heat and garnish with chopped green onions and sesame seeds.
8. Serve hot with rice or noodles. Enjoy!
