Chicken, Spinach, and Mushroom Low-Carb Oven Dish

Ingredients:
2 tablespoons olive oil
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon Italian seasoning
2 tablespoons unsalted butter
3 cloves garlic, minced
8 oz mushrooms, sliced
3 cups fresh spinach
1/2 cup heavy cream
1/2 cup cream cheese, softened
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/4 teaspoon red pepper flakes (optional)
1 tablespoon chopped fresh parsley (for garnish)

Directions:
Preheat the Oven: Set your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Cook the Chicken:

Heat olive oil in a large skillet over medium heat.

Add the chicken pieces, season with salt, black pepper, garlic powder, and Italian seasoning.

Cook for 5-7 minutes until lightly browned. Remove from the skillet and set aside.

Sauté the Vegetables:

In the same skillet, melt the butter. Add minced garlic and sliced mushrooms.

Sauté for 3-4 minutes until the mushrooms are soft.

Stir in the fresh spinach and cook for another minute until wilted.

Make the Creamy Sauce:

Lower the heat and stir in the heavy cream, cream cheese, mozzarella cheese, and Parmesan cheese.

Mix until smooth and creamy. If desired, add red pepper flakes for a slight kick.

Assemble the Dish:

Transfer the cooked chicken into the prepared baking dish.

Pour the creamy spinach and mushroom mixture over the chicken, spreading evenly.

Bake & Serve:

Bake uncovered for 20-25 minutes until bubbly and slightly golden on top.

Remove from the oven, garnish with fresh parsley, and serve hot!
