No-Bake Cherry Cheesecake

This creamy no-bake cherry cheesecake is rich, silky, and topped with glossy cherries for a dessert that looks stunning and tastes even better.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 1/2 cups heavy whipping cream
  • 1 can (21 oz) cherry pie filling
  • 1 tbsp granulated sugar
  • Fresh cherries, for garnish (optional)

Instructions

  1. In a bowl, mix the graham cracker crumbs with melted butter until evenly combined, then press firmly into the bottom of a 9-inch springform pan. Chill the crust for 15 minutes.
  2. In a large bowl, beat the cream cheese until smooth. Add powdered sugar, vanilla extract, lemon juice, and granulated sugar, then mix until creamy and lump-free.
  3. In a separate bowl, whip the heavy cream to stiff peaks, then gently fold it into the cream cheese mixture until light and fluffy.
  4. Spread half of the cheesecake filling over the chilled crust. Spoon a few cherries from the pie filling over the layer, then top with the remaining cheesecake filling and smooth the surface.
  5. Spoon the rest of the cherry pie filling over the top, spreading it evenly to cover the cheesecake.
  6. Refrigerate for at least 6 hours, or overnight, until fully set.
  7. Release from the springform pan, garnish with fresh cherries if desired, and slice chilled to serve.

Tip: For the cleanest slices, dip your knife in hot water and wipe it dry between each cut.
