Cajun Chicken Bites with a Creamy Cheesy Fettuccine Alfredo

Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
12 oz fettuccine pasta
2 tablespoons olive oil
2 tablespoons Cajun seasoning
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Season and Cook the Chicken:
Place chicken pieces in a bowl and coat them with Cajun seasoning, smoked paprika, garlic powder, salt, and pepper. Heat olive oil in a large skillet over medium-high. Add chicken and cook for 6–8 minutes until browned and cooked through. Transfer to a plate and set aside.
Cook the Pasta:
While the chicken cooks, boil a large pot of salted water. Add fettuccine and cook following package directions. Drain the noodles once tender and set aside.
Make the Alfredo Sauce:
Using the same skillet, add minced garlic and sauté for 1–2 minutes until aromatic. Pour in heavy cream and chicken broth. Stir well and let it simmer for 3–4 minutes to gently thicken.
Add the Cheese:
Gradually stir in grated Parmesan and shredded mozzarella. Mix until the cheeses are fully melted and the sauce becomes rich and creamy.
Combine the Pasta and Chicken:
Add the cooked fettuccine to the sauce and toss to fully coat. Return the Cajun chicken bites to the skillet and stir everything together.
Serve:
Spoon the creamy Cajun chicken fettuccine into bowls and sprinkle with chopped parsley for garnish.
