Chocolate Peanut Butter Banana Bites with Matcha White Chocolate

These frozen banana bites are creamy, crunchy, and coated in rich dark chocolate and earthy-sweet matcha white chocolate for the ultimate viral treat.

Ingredients

  • 2 ripe bananas, sliced into 1/2-inch rounds
  • 1/3 cup creamy peanut butter
  • 1/4 cup roasted peanuts, finely chopped
  • 5 oz dark chocolate, chopped
  • 5 oz white chocolate, chopped
  • 1 tsp matcha powder, plus extra for sprinkling
  • 2 tsp coconut oil, divided
  • 1/2 tsp vanilla extract
  • 1 pinch flaky sea salt

Instructions

  1. Line a small tray or plate with parchment paper.
  2. Spread a little peanut butter onto half of the banana slices, sprinkle with chopped roasted peanuts, then top with the remaining banana slices to make little sandwiches.
  3. Place the banana bites on the tray and freeze for 20-30 minutes, until firm.
  4. Melt the dark chocolate with 1 teaspoon coconut oil until smooth. In a separate bowl, melt the white chocolate with the remaining 1 teaspoon coconut oil, then whisk in the matcha powder and vanilla extract until fully smooth.
  5. Dip or spoon half of the frozen banana bites in dark chocolate and the other half in matcha white chocolate, letting the excess drip off.
  6. Place them back on the lined tray and sprinkle with extra chopped peanuts, a dusting of matcha, and a tiny pinch of flaky sea salt if you like.
  7. Freeze again for 10-15 minutes, or until the chocolate is set, then serve straight from the fridge or freezer.

Tip: If your matcha looks lumpy, sift it into the melted white chocolate first for the smoothest, glossiest coating.
