Chocolate Strawberry Cloud Ice Cream Bars

These viral chocolate strawberry cloud bars are ultra-creamy, fruity, and finished with a crisp dark chocolate shell.

Ingredients

  • 2 cups heavy cream (35%), cold
  • 1 cup sweetened condensed milk
  • 1 cup fresh strawberries, finely chopped
  • 1/4 cup freeze-dried strawberries, crushed, divided
  • 8 oz dark chocolate, chopped
  • 2 tbsp coconut oil or neutral oil
  • 1 tsp vanilla extract
  • Pinch of salt
  • 6 wooden popsicle sticks

Instructions

  1. In a large bowl, whip the cold heavy cream to soft peaks using a hand mixer.
  2. Add the sweetened condensed milk, vanilla extract, and a pinch of salt, then fold gently until smooth and fluffy.
  3. Fold in the chopped fresh strawberries and half of the crushed freeze-dried strawberries, keeping the mixture airy.
  4. Spoon the mixture into oval silicone molds or shape into thick bars on a parchment-lined tray. Insert popsicle sticks and freeze for at least 6 hours, or until completely firm.
  5. Melt the dark chocolate with the coconut oil in short bursts in the microwave or over a double boiler, stirring until smooth. Let it cool slightly.
  6. Unmold the frozen bars and quickly dip each one into the melted chocolate, letting the excess drip off. The shell should set almost immediately.
  7. Drizzle with extra chocolate and sprinkle with the remaining crushed freeze-dried strawberries for the viral look.
  8. Freeze for 10 more minutes before serving, or keep stored in the freezer until ready to enjoy.

Tip: Dry the fresh strawberries well before chopping so the ice cream stays creamy and the chocolate coating sticks better.
