Healthy Banana Chocolate Mousse Cake

This healthy banana chocolate mousse cake is rich, creamy, naturally sweet, and made with simple feel-good ingredients.
Ingredients
- 3 ripe bananas
- 1 1/2 cups rolled oats
- 1/2 cup unsweetened cocoa powder
- 1/3 cup maple syrup or honey
- 1 1/2 cups Greek yogurt
- 200 g dark chocolate, melted
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/4 tsp salt
- 2 tbsp peanut butter
- 1/4 cup milk of choice
- 2 tbsp dark chocolate shavings, for topping
Instructions
- Preheat the oven to 175°C (350°F) and line a small round cake pan or loaf pan with parchment paper.
- Add 2 bananas, oats, 1/4 cup cocoa powder, maple syrup, baking powder, salt, milk, and vanilla to a blender. Blend until completely smooth.
- Pour the batter into the prepared pan and bake for 20–25 minutes, until just set. Let the cake cool completely.
- In the blender or a bowl, combine the remaining 1 banana, Greek yogurt, melted dark chocolate, remaining 1/4 cup cocoa powder, and peanut butter. Blend or whisk until silky and mousse-like.
- Spread the chocolate mousse generously over the cooled cake base.
- Chill the cake in the fridge for at least 2 hours so the mousse firms up.
- Top with dark chocolate shavings before slicing and serving.
Tip: For the best texture, use very ripe bananas and chill the cake overnight for an even thicker, fudgier mousse layer.
