Healthy Peanut Butter Banana Chocolate Chip Cookies

These soft, naturally sweet peanut butter banana cookies are packed with melty chocolate for the perfect healthier treat.
Ingredients
- 2 ripe bananas, mashed
- 1 cup natural peanut butter
- 1 1/2 cups oat flour
- 1/4 cup maple syrup or honey
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup dark chocolate chips
- 2 tbsp chopped peanuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the bananas until mostly smooth. Stir in the peanut butter, maple syrup, and vanilla until well combined.
- Add the oat flour, baking soda, cinnamon, and salt. Mix until a soft cookie dough forms, then fold in the chocolate chips and chopped peanuts if using.
- Scoop about 2 tablespoons of dough per cookie onto the prepared baking sheet and gently flatten them slightly with your hand or a spoon.
- Bake for 10-12 minutes, or until the edges are lightly golden and the centers are just set.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Serve warm for extra melty chocolate.
- Store leftovers in an airtight container at room temperature for 2 days or in the fridge for up to 5 days.
