High-Protein Cottage Cheese Cheesecake

This high-protein cottage cheese cheesecake bakes up silky, lightly sweet, and creamy with just a handful of simple ingredients.
Ingredients
- 1 cup cottage cheese
- 1 large egg
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- 1 tablespoon almond flour
- Oil spray or a little butter, for greasing the ramekin
Instructions
- Preheat the oven to 340°F (170°C) and lightly grease or line a small baking dish or ramekin.
- Add the cottage cheese, egg, honey, vanilla extract, and almond flour to a blender.
- Blend until the mixture is completely smooth, creamy, and lump-free.
- Pour the batter into the prepared baking dish or ramekin and gently tap it on the counter to release any air bubbles.
- Bake for 22-25 minutes, or until the cheesecake looks set around the edges with a slight jiggle in the center.
- Let it cool to room temperature, then chill for at least 30 minutes before serving for the best cheesecake texture.
