Homemade Peanut Butter Banana Magnum Ice Cream Bars

Creamy banana-peanut butter frozen bars dipped in crisp dark chocolate and crunchy almonds make the ultimate homemade Magnum-style treat.

Ingredients

  • 2 ripe bananas (about 240 g / 8.5 oz)
  • 150 g (1/2 cup) Greek yogurt
  • 2 tbsp (30 g) peanut butter
  • 60 ml (1/4 cup) milk of choice
  • 1/2 tsp vanilla extract
  • 150 g (5 oz) dark chocolate, chopped
  • 30 g (1/4 cup) chopped almonds
  • 4 popsicle sticks

Instructions

  1. Add the bananas, Greek yogurt, peanut butter, milk, and vanilla extract to a blender and blend until completely smooth and creamy.
  2. Pour the mixture evenly into 4 ice cream bar or popsicle molds, then insert the sticks.
  3. Freeze for 4-6 hours, or until the bars are completely firm.
  4. Melt the dark chocolate gently in the microwave or over a double boiler, then stir in the chopped almonds.
  5. Unmold the frozen bars and quickly dip each one into the melted chocolate mixture, turning to coat all sides.
  6. Let the excess chocolate drip off, then place the bars on a parchment-lined tray. The coating will set quickly from the cold bars.
  7. Serve immediately or freeze again for 10-15 minutes for an extra firm shell.

Tip: For the smoothest coating, pour the melted chocolate into a tall glass so you can dip each bar in one quick motion.
