Homemade Peanut Butter Banana Magnum Ice Cream Bars

Creamy banana-peanut butter frozen bars dipped in crisp dark chocolate and crunchy almonds make the ultimate homemade Magnum-style treat.
Ingredients
- 2 ripe bananas (about 240 g / 8.5 oz)
- 150 g (1/2 cup) Greek yogurt
- 2 tbsp (30 g) peanut butter
- 60 ml (1/4 cup) milk of choice
- 1/2 tsp vanilla extract
- 150 g (5 oz) dark chocolate, chopped
- 30 g (1/4 cup) chopped almonds
- 4 popsicle sticks
Instructions
- Add the bananas, Greek yogurt, peanut butter, milk, and vanilla extract to a blender and blend until completely smooth and creamy.
- Pour the mixture evenly into 4 ice cream bar or popsicle molds, then insert the sticks.
- Freeze for 4-6 hours, or until the bars are completely firm.
- Melt the dark chocolate gently in the microwave or over a double boiler, then stir in the chopped almonds.
- Unmold the frozen bars and quickly dip each one into the melted chocolate mixture, turning to coat all sides.
- Let the excess chocolate drip off, then place the bars on a parchment-lined tray. The coating will set quickly from the cold bars.
- Serve immediately or freeze again for 10-15 minutes for an extra firm shell.
Tip: For the smoothest coating, pour the melted chocolate into a tall glass so you can dip each bar in one quick motion.
