Juicy Korean-Style BBQ Meatballs with Spicy Mayo Sauce

Ingredients:
1 lb ground beef or a mix of beef and pork
1/2 cup finely chopped onion
1/4 cup finely chopped garlic
1/4 cup gochujang Korean chili paste
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon sesame oil
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/4 cup panko bread crumbs
1 large egg, lightly beaten
2 tablespoons mayonnaise
1 tablespoon sriracha or more, to taste
1 teaspoon rice vinegar
Sesame seeds for garnish optional
Chopped green onions for garnish optional
Instructions:
1. In a large bowl, combine the ground beef, onion, garlic, gochujang, soy sauce, brown sugar, sesame oil, ginger, and black pepper. Gently mix with your hands until just combined. Be careful not to overmix, as this can make the meatballs tough.
2. Stir in the panko bread crumbs and the beaten egg. Mix until everything is evenly distributed.
3. Roll the meat mixture into 1-inch meatballs.
4. Heat a large skillet over medium-high heat. Add a tablespoon of oil vegetable or canola to the pan.
5. Add the meatballs to the hot skillet and cook, turning occasionally, until browned on all sides and cooked through about 8-10 minutes. Internal temperature should reach 160°F 71°C.
6. While the meatballs are cooking, prepare the spicy mayo sauce. In a small bowl, whisk together the mayonnaise, sriracha, and rice vinegar until well combined. Adjust the amount of sriracha to your preferred level of spiciness.
7. Once the meatballs are cooked, transfer them to a serving platter. Drizzle generously with the spicy mayo sauce.
8. Garnish with sesame seeds and chopped green onions, if desired.
9. Serve immediately and enjoy!
