Loaded Breakfast Quesadilla with Avocado Crema

Ingredients:
2 large flour tortillas
1 ripe avocado
1/4 cup sour cream or Greek yogurt
2 large eggs
1/4 cup shredded cheddar cheese
1/4 cup shredded Monterey Jack cheese
1/4 cup chopped cooked bacon or sausage
1/4 cup chopped red onion
1 tablespoon chopped cilantro
1 jalapeño, seeded and minced optional
Salt and pepper to taste
1 tablespoon olive oil or butter
Instructions:
1. Prepare the Avocado Crema: In a small bowl, mash the avocado with a fork. Stir in the sour cream or yogurt, cilantro, jalapeño if using, salt, and pepper. Set aside.
2. Cook the Eggs: Heat 1 tablespoon of olive oil or butter in a non-stick skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness, scrambling or frying them as you prefer. Season with salt and pepper.
3. Assemble the Quesadillas: Place one tortilla in the skillet. Sprinkle half of the cheddar and Monterey Jack cheese over the tortilla. Top with half of the cooked bacon or sausage, half of the scrambled eggs, and half of the red onion. Sprinkle with the remaining cheese.
4. Cook the Quesadilla: Carefully place the second tortilla on top of the filling. Cook for 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted and gooey. You may need to use a spatula to press down gently and ensure even cooking.
5. Serve: Remove the quesadilla from the skillet and cut it in half or into quarters. Serve immediately with a generous dollop of the avocado crema. Enjoy!
