Mango Sticky Chia Seed Pudding

Creamy coconut chia pudding swirled with sweet mango and topped with juicy mango chunks makes this tropical dessert feel like sunshine in a glass.
Ingredients
- 1/2 ripe mango, mashed into a puree
- 1/2 cup coconut yogurt
- 1/3 cup coconut milk
- 2 tablespoons chia seeds
- 1 tablespoon shredded coconut
- 1/2 cup mango chunks, plus more to taste
- 1 teaspoon sesame seeds, or to taste
- 1 tablespoon coconut shreds, for garnish (optional)
Instructions
- In a container or bowl, mash the 1/2 mango until mostly smooth to create a puree.
- Add the coconut yogurt, coconut milk, chia seeds, and shredded coconut to the mango puree.
- Stir very well until fully combined, making sure the chia seeds are evenly distributed.
- Cover and refrigerate overnight, or for at least 4 hours, until thick and pudding-like.
- Give the pudding a good stir before serving to loosen and evenly mix the texture.
- Spoon into a serving glass or bowl and top with mango chunks.
- Finish with sesame seeds and optional coconut shreds for garnish.
- Serve chilled and enjoy.
Tip: For the thickest, creamiest texture, stir the pudding again after 10 minutes in the fridge to prevent the chia seeds from clumping.
