No-Bake Strawberry Cheesecake

Creamy, fluffy, and packed with sweet strawberry flavor, this no-bake cheesecake sets up beautifully into perfect sliceable wedges.

Ingredients

  • 200 g graham crackers, crushed
  • 90 g unsalted butter, melted
  • 500 g cream cheese, softened
  • 120 g powdered sugar
  • 240 ml heavy whipping cream, cold
  • 200 g strawberries, finely chopped
  • 120 g strawberry jam
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 8 g powdered gelatin
  • 3 tbsp cold water

Instructions

  1. Line the bottom and sides of an 8-inch springform pan with parchment paper.
  2. Mix the crushed graham crackers with melted butter until evenly coated, then press firmly into the bottom of the pan. Chill while you make the filling.
  3. In a large bowl, beat the cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth. Mix in the strawberry jam, then fold in the chopped strawberries.
  4. In a separate bowl, whip the cold heavy cream to medium-stiff peaks, then gently fold it into the cream cheese mixture until light and fluffy.
  5. Sprinkle the gelatin over the cold water and let it bloom for 5 minutes. Microwave for 10-15 seconds until dissolved, then quickly whisk it into the filling.
  6. Pour the strawberry cheesecake mixture over the crust and smooth the top. Refrigerate for at least 6 hours, or until fully set and sliceable.
  7. Release from the springform pan, peel away the parchment, and serve chilled. Top with extra strawberries or jam if desired.

Tip: For the cleanest slices, chill the cheesecake overnight and dip your knife in hot water before cutting each piece.
