One-Pot Smoky Cheddar Ranch Chicken & Beef Sausage Pasta

Ingredients:
1 lb chicken breast, diced
1 lb smoked beef sausage, sliced (andouille or kielbasa style)
12 oz penne or rotini pasta
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
2 cups chicken broth
1 cup milk
1 (1 oz) packet ranch seasoning mix
1 teaspoon smoked paprika
1/2 teaspoon black pepper
2 cups shredded sharp cheddar cheese
1/4 cup chopped fresh parsley (for garnish)
Directions:
Sear the Meats:
In a large, deep skillet or Dutch oven, heat the olive oil over medium-high heat. Add the diced chicken breast and cook until browned on all sides, about 5–6 minutes.
Add the Sausage:
Stir in the sliced smoked beef sausage and cook for another 3–4 minutes, letting it brown slightly and release its smoky flavor.
Sauté Aromatics:
Add the diced onion and minced garlic to the pan. Cook for 2–3 minutes, stirring frequently, until the onion becomes translucent and fragrant.
Deglaze and Season:
Pour in the chicken broth and milk, scraping the bottom of the pan to release any flavorful bits. Stir in the ranch seasoning mix, smoked paprika, and black pepper.
Cook the Pasta:
Add the uncooked pasta directly into the skillet. Stir well to coat everything in the creamy broth. Bring to a gentle simmer, then reduce heat to low, cover, and cook for about 12–14 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Cheesy Finish:
Stir in the shredded cheddar cheese until melted and creamy. Taste and adjust seasoning if needed.
Garnish and Serve:
