Peanut Butter Greek Yogurt Fudge

This creamy peanut butter Greek yogurt fudge is smooth, lightly sweetened with honey, and tastes like a rich treat with a wholesome twist.
Ingredients
- 1 cup creamy peanut butter
- 1 cup plain Greek yogurt
- 3 tablespoons honey, plus extra for drizzling
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon fine sea salt
- 2 tablespoons peanut flour or powdered peanut butter
- 2 tablespoons chopped peanuts, for topping
Instructions
- Line a small loaf pan or 8-inch square container with parchment paper.
- In a medium bowl, whisk together the peanut butter, Greek yogurt, honey, melted coconut oil, vanilla, salt, and peanut flour until completely smooth and thick.
- Spread the mixture evenly into the prepared pan, smoothing the top with a spatula.
- Sprinkle the chopped peanuts over the top and lightly drizzle with a little extra honey.
- Freeze for 3 to 4 hours, or until firm enough to slice cleanly.
- Lift the fudge from the pan, cut into small squares, and let sit at room temperature for 2 to 3 minutes before serving for the creamiest texture.
