Pink Raspberry Peach Ice Cream

This dreamy pink ice cream blends juicy peaches, tart raspberries, and creamy vanilla into a luscious frozen treat that looks as good as it tastes.

Ingredients

  • 2 cups frozen peach slices
  • 1 cup fresh raspberries
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup sweetened condensed milk
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 2 tbsp lemon juice
  • 2 tbsp powdered sugar

Instructions

  1. Add the frozen peaches, raspberries, cream cheese, heavy cream, sweetened condensed milk, honey, vanilla extract, lemon juice, and powdered sugar to a blender.
  2. Blend until completely smooth and thick, stopping to scrape down the sides as needed.
  3. Pour the mixture into a loaf pan or freezer-safe container and smooth the top.
  4. Cover and freeze for 4-6 hours, or until firm enough to scoop.
  5. Let the ice cream sit at room temperature for 5 minutes before serving for the creamiest texture.
  6. Scoop into bowls or cones and top with extra raspberries if desired.

Tip: For an even brighter pink color, add an extra handful of raspberries before blending.
