Roasted Carrots with Whipped Ricotta and Hot Honey

Ingredients:
1 lb baby carrots, peeled
2 tablespoons olive oil
Salt and pepper to taste
1/2 cup ricotta cheese
1 tablespoon honey
1 teaspoon hot sauce (adjust to taste)
Fresh parsley for garnish (optional)
Instructions:
Preheat the oven to 400°F (200°C).

Toss the peeled baby carrots with olive oil, salt, and pepper.

Spread the carrots in a single layer on a baking sheet.

Roast the carrots in the oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.

While the carrots roast, whip the ricotta cheese until smooth and creamy.

In a small bowl, combine honey and hot sauce, then warm it slightly in the microwave or on the stove.

Once the carrots are done, remove them from the oven and transfer to a serving plate.

Spoon the whipped ricotta over the roasted carrots, then drizzle with the hot honey mixture.
