Ingredients
- 4 Medjool dates, pitted and chopped
- 200 g thick plain yogurt
- 25 g rolled oats, blended into a fine flour
- 1 tsp peanut butter
- 25 g dark chocolate
- 1 tsp coconut oil
- 2 tbsp roasted peanuts, roughly chopped
- 1 tsp honey or maple syrup (optional)
Instructions
- Line the bottom of a small jar or dessert cup with the chopped dates, pressing them down slightly to form a sticky base.
- In a bowl, mix the yogurt, blended oats, peanut butter, and honey or maple syrup if using, until smooth and creamy.
- Spread the yogurt mixture evenly over the dates.
- Sprinkle the roasted peanuts over the yogurt layer.
- Melt the dark chocolate with the coconut oil until smooth, either in short microwave bursts or over a double boiler.
- Pour the melted chocolate over the top and spread gently into an even layer.
- Refrigerate overnight, or for at least 4 hours, until firm and chilled through.
- Serve cold straight from the fridge for the best texture.
Tip: For an even more candy-bar flavor, add a tiny pinch of salt on top of the melted chocolate before chilling.
