Sticky Honey Garlic Sausage Pasta Skillet

Ingredients:
1 pound Italian sausage sweet or spicy, removed from casings
1 tablespoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1 14.5 ounce can diced tomatoes, undrained
1/2 cup honey
1/4 cup soy sauce
2 tablespoons rice vinegar
1 teaspoon red pepper flakes optional
1 pound pasta penne, rotini, or your favorite shape
1/4 cup chopped fresh parsley for garnish
Instructions:
1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add sausage and cook, breaking it up with a spoon, until browned and cooked through, about 6-8 minutes.
3. Add onion to the skillet and cook until softened, about 3 minutes. Stir in minced garlic and cook for another minute until fragrant.
4. Pour in the diced tomatoes undrained, honey, soy sauce, rice vinegar, and red pepper flakes if using. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
5. Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add a little of the reserved pasta water until you reach your desired consistency.
6. Serve immediately, garnished with fresh parsley.
