Sweet Potato Chocolate Cookies

These soft, fudgy sweet potato chocolate cookies are naturally sweetened, rich with cocoa, and incredibly easy to make.

Ingredients

  • 1 cup mashed cooked sweet potato (240 g)
  • 1/3 cup natural peanut butter (80 g)
  • 2 tbsp unsweetened cocoa powder (15 g)
  • 1 tbsp honey or maple syrup (20 g)
  • 1/4 tsp vanilla extract (1 ml)
  • 1/4 tsp baking powder (1 g)
  • 2 tbsp dark chocolate chips, optional (20 g)

Instructions

  1. Preheat the oven to 180°C / 350°F and line a baking tray with parchment paper.
  2. In a mixing bowl, add the mashed sweet potato, peanut butter, cocoa powder, honey or maple syrup, vanilla extract, and baking powder.
  3. Mix until completely smooth and well combined. Fold in the dark chocolate chips if using.
  4. Scoop the dough into 6 equal portions and place them on the prepared tray. Shape each portion into a small cookie and flatten slightly with your hands.
  5. Bake for 12-15 minutes, until the cookies are set on the outside but still soft in the center.
  6. Let the cookies cool on the tray for a few minutes, then transfer to a rack to cool completely before serving.

Tip: For the best texture, use well-mashed sweet potato with no excess moisture; if the dough feels too sticky, chill it for 10-15 minutes before shaping.
