Sweet Potato Chocolate Ice Cream

This sweet potato chocolate ice cream is ultra-creamy, naturally sweet, and packed with rich chocolate flavor in every scoop.
Ingredients
- 1 cup cooked sweet potato, cooled
- 2 tablespoons unsweetened cocoa powder
- 1/2 cup milk
- 1-2 tablespoons honey
- 1/2 teaspoon vanilla extract
- 1 pinch salt
- 2 tablespoons dark chocolate chips (optional)
Instructions
- Add the cooked sweet potato, cocoa powder, milk, honey, vanilla extract, and salt to a blender.
- Blend until completely smooth and creamy, scraping down the sides as needed.
- Taste and add a little more honey if you want it sweeter, then blend again briefly.
- Stir in the chocolate chips if using, or pulse once or twice for small chocolate flecks.
- Pour the mixture into a freezer-safe container and spread it evenly.
- Freeze for 1 to 2 hours, or until thick and scoopable.
- Let it sit at room temperature for a few minutes if needed, then scoop and serve.
Tip: For the creamiest texture, use very soft cooked sweet potato and chill the blended mixture before freezing.
