Sweet Potato Chocolate Ice Cream

This sweet potato chocolate ice cream is ultra-creamy, naturally sweet, and packed with rich chocolate flavor in every scoop.

Ingredients

  • 1 cup cooked sweet potato, cooled
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 cup milk
  • 1-2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 2 tablespoons dark chocolate chips (optional)

Instructions

  1. Add the cooked sweet potato, cocoa powder, milk, honey, vanilla extract, and salt to a blender.
  2. Blend until completely smooth and creamy, scraping down the sides as needed.
  3. Taste and add a little more honey if you want it sweeter, then blend again briefly.
  4. Stir in the chocolate chips if using, or pulse once or twice for small chocolate flecks.
  5. Pour the mixture into a freezer-safe container and spread it evenly.
  6. Freeze for 1 to 2 hours, or until thick and scoopable.
  7. Let it sit at room temperature for a few minutes if needed, then scoop and serve.

Tip: For the creamiest texture, use very soft cooked sweet potato and chill the blended mixture before freezing.
