Sweet Potato Crust Veggie Pizza

This sweet potato pizza bake has a crispy golden base, gooey melted cheese, and colorful veggie toppings for a lighter twist on classic pizza night.
Ingredients
- 2 medium sweet potatoes (about 1 lb / 450 g), peeled and grated
- 1 large egg
- 1/2 cup shredded mozzarella, plus 1 cup for topping
- 1/4 cup grated Parmesan cheese
- 2 tbsp almond flour
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/3 cup pizza sauce
- 1/2 cup cherry tomatoes, halved
- 1/2 cup mixed sliced veggies (red onion, bell pepper, olives, or mushrooms)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking tray or pizza pan with parchment paper.
- Place the grated sweet potato in a clean towel and squeeze out as much moisture as possible. Transfer to a bowl.
- Mix the sweet potato with the egg, 1/2 cup mozzarella, Parmesan, almond flour, garlic powder, and oregano until combined.
- Spread the mixture into a thin round pizza shape on the prepared tray. Press firmly and smooth the edges. Bake for 20-25 minutes, until set and golden around the edges.
- Remove the crust from the oven and spread with pizza sauce. Top with the remaining 1 cup mozzarella, cherry tomatoes, and mixed sliced veggies.
- Return to the oven and bake for 10-12 minutes more, until the cheese is melted and bubbling.
- Let it rest for 5 minutes, then slice and serve warm.
Tip: For the crispiest sweet potato crust, squeeze out every bit of moisture before mixing and bake the base on its own before adding toppings.
