Sweet Potato Pizza Bites

These cheesy sweet potato pizza bites are a fun, wholesome twist on pizza night with crispy roasted sweet potato rounds, melty mozzarella, and savory pepperoni.
Ingredients
- 1 large sweet potato, sliced into 1/2-inch rounds
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese
- 16–20 mini pepperoni slices
- 1 tablespoon chopped fresh basil
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet or oven-safe tray with parchment paper.
- Arrange the sweet potato rounds in a single layer. Brush both sides with olive oil, then season with garlic powder, oregano, salt, and black pepper.
- Bake for 15 minutes, flip the rounds, and bake for another 8–10 minutes until the sweet potatoes are tender and lightly golden around the edges.
- Remove from the oven and top each round with a spoonful of pizza sauce, a sprinkle of mozzarella, a little Parmesan, and a few mini pepperoni slices.
- Return to the oven and bake for 5–7 minutes, or until the cheese is melted and bubbly.
- For extra browning, broil for 1–2 minutes at the end, watching closely so the cheese doesn’t burn.
- Finish with fresh basil and serve hot while the cheese is still gooey.
Tip: Slice the sweet potato rounds evenly so they cook at the same rate, and roast them until just tender before adding toppings to keep the bites from turning soggy.
