Sweet Potato Pizza Bites

These cheesy sweet potato pizza bites are a fun, wholesome twist on pizza night with crispy roasted sweet potato rounds, melty mozzarella, and savory pepperoni.

Ingredients

  • 1 large sweet potato, sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 16–20 mini pepperoni slices
  • 1 tablespoon chopped fresh basil

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet or oven-safe tray with parchment paper.
  2. Arrange the sweet potato rounds in a single layer. Brush both sides with olive oil, then season with garlic powder, oregano, salt, and black pepper.
  3. Bake for 15 minutes, flip the rounds, and bake for another 8–10 minutes until the sweet potatoes are tender and lightly golden around the edges.
  4. Remove from the oven and top each round with a spoonful of pizza sauce, a sprinkle of mozzarella, a little Parmesan, and a few mini pepperoni slices.
  5. Return to the oven and bake for 5–7 minutes, or until the cheese is melted and bubbly.
  6. For extra browning, broil for 1–2 minutes at the end, watching closely so the cheese doesn’t burn.
  7. Finish with fresh basil and serve hot while the cheese is still gooey.

Tip: Slice the sweet potato rounds evenly so they cook at the same rate, and roast them until just tender before adding toppings to keep the bites from turning soggy.
