Texas Roadhouse Butter Chicken Skillet

Ingredients:
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
1 10 ounce package frozen chopped spinach, thawed and squeezed dry
1 cup chicken broth
1/2 cup heavy cream
1/4 cup butter
1/4 cup all-purpose flour
1 tsp paprika
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper or more, to taste
Salt and black pepper to taste
Fresh parsley, chopped for garnish
Instructions:
1. Season chicken cubes generously with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
3. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
4. Sprinkle flour over the vegetables and cook for 1 minute, stirring constantly.
5. Gradually whisk in chicken broth until smooth. Stir in heavy cream, butter, paprika, garlic powder, onion powder, and cayenne pepper. Bring to a simmer, stirring occasionally.
6. Reduce heat to low and stir in the cooked chicken and spinach. Simmer for 5 minutes, or until the sauce has thickened slightly and the spinach is heated through.
7. Season with salt and pepper to taste.
8. Garnish with fresh parsley and serve immediately. Enjoy with rice, mashed potatoes, or crusty bread!
