3-Ingredient No-Bake Chocolate Mousse Cake

This rich, silky no-bake chocolate mousse cake is unbelievably decadent with just a few simple ingredients.
Ingredients
- 300 g dark chocolate, chopped
- 400 ml full-fat coconut cream, chilled
- 200 g plain chocolate biscuits or oat biscuits, crushed
- 2 tbsp melted coconut oil or butter
Instructions
- Line a 7-inch springform pan with parchment paper.
- Mix the crushed biscuits with the melted coconut oil until the texture resembles wet sand, then press firmly into the base of the pan. Chill for 15 minutes.
- Melt the dark chocolate gently over a bowl of simmering water or in short microwave bursts, then let it cool slightly.
- Whip the chilled coconut cream until smooth and fluffy, then fold in the melted chocolate until fully combined and silky.
- Pour the chocolate mousse mixture over the chilled crust and smooth the top.
- Refrigerate for at least 4 hours, or until fully set and sliceable.
- For neat slices, warm a sharp knife in hot water, wipe dry, and cut cleanly through the cake.
