Peach Vanilla Cheesecake Ice Cream

Ingredients
- 1 cup frozen peach slices
- 1/2 cup cream cheese, softened
- 2 tablespoons honey
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
- 1 tablespoon crushed graham crackers, plus more for topping
- Fresh peach slices, for serving (optional)
Instructions
- Add the frozen peaches, cream cheese, honey, milk, and vanilla extract to a blender.
- Blend until completely smooth, thick, and creamy, stopping to scrape down the sides if needed.
- Stir in the crushed graham crackers or pulse once or twice for a cheesecake-style swirl.
- Pour the mixture into a freezer-safe container and smooth the top.
- Freeze for 1 to 2 hours, until lightly set and scoopable.
- Scoop into bowls and top with extra graham cracker crumbs and fresh peach slices if desired.
