Flourless Chocolate Banana Cake

This flourless chocolate banana cake is rich, fudgy, naturally sweet, and finished with a silky chocolate top and fresh banana slices.

Ingredients

  • 2 ripe bananas, mashed
  • 3 large eggs
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons peanut butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey (optional)
  • 1/4 teaspoon baking powder
  • 60 g (2 oz) dark chocolate, melted
  • 1 teaspoon coconut oil or butter
  • 1/2 banana, sliced, for topping

Instructions

  1. Preheat the oven to 180°C (350°F) and line a small round or loaf pan with parchment paper.
  2. Mash the 2 ripe bananas in a bowl until mostly smooth.
  3. Add the eggs, cocoa powder, peanut butter, vanilla extract, maple syrup if using, and baking powder. Whisk until a thick, smooth chocolate batter forms.
  4. Pour the batter into the prepared pan and smooth the top.
  5. Bake for 15–18 minutes, or until the cake is set on top but still slightly fudgy in the center.
  6. Let the cake cool for 10–15 minutes, then remove it from the pan.
  7. Mix the melted dark chocolate with coconut oil or butter and spread it over the cooled cake for a glossy finish.
  8. Top with banana slices, dust with a little cocoa powder if desired, then slice and serve.

Tip: For the fudgiest texture, use very ripe bananas with lots of brown spots and avoid overbaking the cake.
