Chocolate-Covered Yogurt Coconut Strawberries

These healthy strawberry bites are stuffed with a creamy coconut-yogurt filling, dipped in dark chocolate, and chilled into the perfect sweet snack.
Ingredients
- 120 g Greek yogurt
- 100 g unsweetened shredded coconut
- 2 tsp honey
- 10-12 large fresh strawberries
- 130 g dark chocolate, chopped
- 1 tsp coconut oil
- 2 tbsp chopped nuts, for topping (optional)
Instructions
- Wash and thoroughly dry the strawberries, then remove the tops if desired and hollow the centers slightly to make room for the filling.
- In a bowl, mix the Greek yogurt, shredded coconut, and honey until thick and well combined.
- Fill or coat the strawberries with the yogurt-coconut mixture, shaping it neatly around each strawberry. Place them on a lined tray and refrigerate for 20-30 minutes, until firm.
- Add the dark chocolate and coconut oil to a heatproof bowl and melt gently in the microwave in short bursts or over a double boiler, stirring until smooth.
- Dip each chilled strawberry into the melted chocolate, letting the excess drip off, then place back on the lined tray.
- Sprinkle with chopped nuts if using, then refrigerate again for 15-20 minutes, or until the chocolate is fully set.
- Serve chilled for a refreshing, chocolatey snack.
Tip: Make sure the strawberries are completely dry before coating, or the filling and chocolate won’t stick properly.
