Healthy Bounty-Style Ice Cream Bars

These no-bake coconut date bars are creamy, chocolatey, naturally sweet, and taste like a wholesome frozen Bounty treat.
Ingredients
- 1 cup soft Medjool dates, pitted
- 1 cup unsweetened shredded coconut
- 2 cups unsweetened desiccated coconut
- 1/3 cup milk of choice
- 2 tbsp honey
- 1 tsp vanilla extract
- Pinch of salt
- 1 1/4 cups dark chocolate, chopped
- 1 tbsp coconut oil
- 1 tbsp cocoa powder
- 2 tbsp extra shredded coconut, for topping
Instructions
- Line a small loaf pan or square container with parchment paper.
- Make the base by blending the dates, shredded coconut, and cocoa powder in a food processor until sticky and well combined. Press the mixture firmly into the bottom of the pan.
- In a bowl, mix the desiccated coconut, milk, honey, vanilla, and salt until a thick, moist filling forms. Spread it evenly over the date base and press down well.
- Freeze for 1 to 2 hours, or until very firm. Lift out and cut into bar shapes.
- Melt the dark chocolate with the coconut oil until smooth. Let it cool slightly.
- Dip or coat each frozen bar in the melted chocolate, then place on a parchment-lined tray. Sprinkle with extra shredded coconut before the chocolate sets.
- Freeze for 10 to 15 minutes to firm up the coating, then serve straight from the freezer or let sit for 2 to 3 minutes for a softer bite.
Tip: If your coconut filling feels too dry, add an extra splash of milk; if it feels too wet, mix in a little more desiccated coconut until it holds together.
