Creamy Blue Moon Ice Cream

This creamy Blue Moon ice cream is smooth, lightly sweet, and beautifully bright blue for a fun homemade frozen treat.
Ingredients
- 2 cups heavy cream, cold
- 1 cup sweetened condensed milk
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 teaspoon lemon extract
- 6-8 drops blue food coloring
- 1-2 drops violet food coloring (optional, for a deeper Blue Moon shade)
- 1 tablespoon light corn syrup
- 1 pinch salt
Instructions
- In a large mixing bowl, whisk together the sweetened condensed milk, whole milk, vanilla extract, almond extract, lemon extract, corn syrup, and salt until smooth.
- Add the blue food coloring and the optional violet food coloring, mixing until you get a bright, even Blue Moon color.
- In a separate bowl, whip the cold heavy cream until it reaches soft peaks.
- Gently fold the whipped cream into the blue mixture until fully combined and creamy, being careful not to deflate it too much.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Transfer the churned ice cream to a loaf pan or freezer-safe container, smooth the top, and cover tightly.
- Freeze for 4-6 hours, or until firm enough to scoop.
- Scoop and serve on its own or with sprinkles for an extra fun finish.
