Healthy Banana Blueberry Oat Cake

This soft, naturally sweet banana blueberry oat cake is a wholesome one-bowl-style bake perfect for breakfast, snacking, or a light dessert.
Ingredients
- 1 cup rolled oats (90 g)
- 1 medium banana, chopped (120 g)
- 1 large egg
- 1/2 cup milk (120 ml)
- 1 tsp baking powder (5 g)
- 1/2 cup blueberries (75 g)
- 1 tsp vanilla extract
- 1 tbsp honey or maple syrup (optional)
- 1 tsp oil or butter, for greasing the pan
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a small baking dish or loaf pan.
- Add the rolled oats to a blender and blend until they become a fine oat flour.
- Add the chopped banana, egg, milk, baking powder, vanilla extract, and honey or maple syrup if using. Blend until smooth and creamy.
- Pour the batter into the prepared pan, then gently fold or scatter the blueberries evenly over the top.
- Bake for 25 to 35 minutes, or until the cake is golden and a toothpick inserted in the center comes out mostly clean.
- Let the cake cool in the pan for 10 minutes before slicing and serving.
Tip: For the best texture, use a ripe banana with plenty of brown spots, and toss the blueberries in a little oat flour before adding if you want to keep them from sinking.
