Apple Cinnamon Protein Ice Cream

This apple cinnamon protein ice cream is thick, creamy, naturally sweet, and packed with cozy fall flavor in every spoonful.

Ingredients

  • 2 medium apples, peeled and diced
  • 1 cup unsweetened almond milk
  • 1 cup plain nonfat Greek yogurt
  • 1 scoop vanilla protein powder (about 30 g)
  • 1 1/2 cups ice cubes
  • 1 tablespoon almond butter
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1-2 tablespoons maple syrup or honey, to taste
  • 1 tablespoon chia seeds

Instructions

  1. Add the diced apples, almond milk, Greek yogurt, vanilla protein powder, almond butter, cinnamon, vanilla extract, maple syrup, and chia seeds to a blender.
  2. Blend until completely smooth and creamy, stopping to scrape down the sides if needed.
  3. Add the ice cubes and blend again until the mixture becomes thick and fluffy like soft-serve ice cream.
  4. Taste and adjust sweetness or cinnamon if desired, then blend briefly once more.
  5. For a firmer ice cream texture, transfer the mixture to a freezer-safe container and freeze for 30-45 minutes.
  6. Scoop into bowls or glasses and serve immediately, with an extra sprinkle of cinnamon on top if you like.

Tip: For the thickest texture, use frozen apple chunks instead of fresh and chill the blender jar beforehand.
