Frozen Peanut Butter Yogurt Cups

These frozen peanut butter yogurt cups have a creamy, tangy center wrapped in a snappy chocolate shell for the ultimate easy sweet treat.
Ingredients
- 1 cup Greek yogurt
- 1/2 cup creamy peanut butter
- 1-2 tbsp honey
- 1 cup melted dark or semisweet chocolate
- 1 tbsp coconut oil
- 1/2 tsp vanilla extract
- Pinch of sea salt
- 8 paper cupcake liners
Instructions
- Line a muffin tin or small tray with 8 paper cupcake liners.
- In a medium bowl, mix the Greek yogurt, peanut butter, honey, vanilla extract, and sea salt until smooth and creamy.
- Spoon about 1 teaspoon of melted chocolate into each liner and spread it slightly up the sides. Freeze for 10 minutes until set.
- Divide the peanut butter yogurt mixture evenly among the cups, leaving a little space at the top.
- Top each cup with the remaining melted chocolate, spreading it to fully cover the filling.
- Freeze the cups for 1-2 hours, or until completely firm.
- Peel off the liners and let the cups sit at room temperature for 2-3 minutes before eating for the best creamy texture.
Tip: Stir coconut oil into the melted chocolate to make the shell smoother and easier to bite once frozen.
