Gooey Strawberry Muffin Buns

These soft, bakery-style strawberry buns bake up pillowy, buttery, and bursting with juicy berries in every gooey bite.

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 3/4 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • 4 oz cream cheese, cubed
  • 2 tbsp powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and generously grease a 12-cup muffin pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
  3. In another bowl, whisk the eggs, milk, melted butter, and vanilla until smooth. Pour the wet ingredients into the dry ingredients and stir just until combined.
  4. Fold in the diced strawberries, then divide the thick batter evenly among the muffin cups. Press a small cube of cream cheese into the center of each and sprinkle the tops with powdered sugar.
  5. Bake for 20 to 24 minutes, until the tops are lightly golden and the centers are just set.
  6. Let the buns cool in the pan for 5 minutes, then gently loosen and serve warm for the best soft, gooey texture.

Tip: For extra jammy flavor, toss the strawberries with 1 teaspoon of sugar before folding them into the batter.
