Fudgy Chocolate Ganache Cake

This ultra-rich chocolate cake is intensely fudgy, topped with a glossy ganache swirl that makes every slice look bakery-perfect.
Ingredients
- 200 g dark chocolate, chopped
- 170 g unsalted butter
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp salt
- 1/2 cup heavy cream
- 120 g semi-sweet chocolate, chopped
Instructions
- Preheat the oven to 350°F (175°C) and grease and line an 8-inch round cake pan with parchment paper.
- Melt the dark chocolate and butter together in a heatproof bowl over simmering water or in short microwave bursts, stirring until smooth.
- Whisk in the sugar, then add the eggs one at a time. Stir in the vanilla extract until glossy and well combined.
- Sift in the flour, cocoa powder, and salt. Fold gently until just combined, then pour the batter into the prepared pan.
- Bake for 25–30 minutes, until the top is set but the center still has a slight jiggle. Let the cake cool completely in the pan before removing.
- To make the ganache, heat the heavy cream until just steaming, then pour it over the semi-sweet chocolate. Let sit for 2 minutes, then stir until smooth and shiny.
- Spread the ganache over the cooled cake in thick swirls and let it set slightly before slicing and serving.
Tip: For the fudgiest texture, chill the cake for 30 minutes before slicing and use a warm knife for clean, perfect pieces.
